Vmenu CSS controlling initial state

Have a client who wanted their side (vertical) menus and submenus open by default. Now, of course, they want these closed when the page loads and active by click.
I've done a ton of custom CSS now and need to "surgically" change this setting. Have overwritten the functions, js and related pages but seems the CSS is keeping them open still.
What do I change in the CSS to make them closed by default and open on click?
Any help is appreciated!
