I am only testing this in a regular brower sized down to phone dimensions, however, when I do, the menu items do not show by default. An icon, that is obviously some menu icon shows, you click it and it drops down the menu items but the icon is not descriptive at all.
How can I change the icon, get rid of it, or replace it with text?

This is the responsive part of the template taking over. It's an icon regularly used to replace the complete menu for better experience on small screenssuch as mobiles, pads etc.
You can change its appearance by editing .art-nav .art-menu-btn in responsive.template.css ;)
