Is there any way to set the default text color or all in one setting to a single color. I don't normally use the colors that the template generates but prefer black for text, headings, etc.

Did you check: Color and fonts-> Typography-> Edit typography

Support said they will take the feature into consideration. The was no way except go through every place that had a text/link setting and change them one at a time. Yuck.
