I just installed version 3.1 for mac and I the export button is grey and won't let me export to template. So what am I missing?

Try exporting using Ctrl+E keyboard shortcut.

You can also export from: Ideas menu item => Export.

This is a known issue for the Mac version. You can still export through the simplified menu (there is a post about this on the Website HTML forum)

I also had a gray export menu item. As I'm dutch I changed the preference settings in the top menu (artisteer) from english to dutch. Everything worked fine now. The slow program was now fast and the export menu option worked.
Switching back to english undid everything again (again slow and export button grayed again)

And more surprising.....if in the english language setting and you set in the File menu the "Change Template" to Wordpress (in my case) again you'll see the menu item " export" is black/active and works.
