Is there a way to switch the top menu buttons to link to a category view instead of a page view? I want my posts to be organized into different sections clickable from the top - but can't figure out how to do it.

Honestly, the easiest way to do it, is simply not to use Artisteer to create your menu bar. An Artisteer menu bar may be pretty but is clunky and overly complicated (good engineering keeps things simple). It is easier to create a wp manually to add to your Artisteer theme, so you can one that actually works in standard ways, allowing to manually make changes with it without having to tackle a Rubik's cube to do so. Artisteer is good for creating nice-looking, generically-structured templates, but that's about it.

You can try changing wp_list_pages in your index.php and functions.php to wp_list_categories to see if it works

I think Artisteer should step up to the plate and provide a step by step guide to do this for the customers who invested hard-earned money on their product, since it is a problem with their pretty but problematic (ie crappy) menu bar.

I have seen that some of the suggestions in Artisteer show categories and pages as well in top menu bar but some does not.
