I have a client who really likes the look of this theme: http://wordpress.org/extend/themes/gravel
Question...how did they make the aged paper look using Artisteer?
It was obviously created with Artisteer, right?

No, Wordpress.org does not allow Artisteer themes to be uploaded to their theme collection. Something about not conforming to standards. (as far as I know, I just recently found out while viewing the WP forums).

It uses image backgrounds for the article block and also the sidebar block. Artisteer does not have this ability. It does let you use a page background image and doing that might get you close.
